And no I am not seeking a copywrite infringement case. But I'm glad I could inspire what looks like the most epic wings KFC has ever produced.

JALAPENO POPPER WINGS

When I was first approached about working with #powerupwithgreens with Sobeys, I was like, what would be the best way to get more greens into a chicken wing dish? What about, directly into the wing itself? But there's a bunch of, you know, bones and stuff inside right? Not when I was done with them.



Again, I took this as a great challenge to do something I've never seen before, and to keep pushing that chicken wing envelope. Jalapeno Popper Wings; a deboned chicken wing stuffed with cream cheese and greens was literally that envelope.

I had my good buddy Jason on hand again with me while creating these wings, and he was once again extremely helpful. He took photos, helped with prep - he even scrubbed my deep fryer down. If that's not friendship I don't know what is . . .



JALAPENO POPPER WINGS
Ingredients

  • 10 wings (wingette's only)
  • 250g of Cream Cheese
  • 1 Cup of Mayo
  • 1 large Jalapeno Diced
  • Handful of Chopped Spinach
  • 1 packet of Extra Crispy Coating Mix
  • Handful of diced Chives
  • Salt & Pepper to taste
  • 1-2 Eggs (whisked)
  • 2-3 dashes of Hot Sauce




This is a simple yet complex recipe. Simple in concept and ingredients, complex in execution.



My diced veggies. Jalapenos, chives, and chopped spinach. The spinach was frozen, and came in balls inside the package, which I have never seen before. That pile is about 3 balls thawed and drained.


Everybody into the pool! Cream cheese, mayo, the greens and the seasoning. This part is super easy. After mixing, it all went into a ziplock bag and into the fridge to firm up. Now you are actually only going to need 1/2 of this mixture OR you could:


  • double the number of wings to fill
  • take a few tortillas, fill, wrap and cut making them pinwheels
  • dip with tortillas or some firm cracker like a Triscuit
  • fill into a won-ton, wrap and deep fry


Now, the next part is going to take some skill, some patience, and a lot of love (or hate, depending on if you think this is cruel to a chicken or not). You are definetely going to get your hands dirty, maybe even a bit bloody. So get your prep station clear, get comfortable, because you are going to get inside the chicken wings.

HOW TO DEBONE A CHICKEN WING



Before this event I had never deboned a chicken wing before (at least, post cooking). This was exciting and a little frustrating. If you a squeamish, this is not a process for you. You are popping bones out of sockets, mushing tendons, and getting your hands all over that former appendage.

They also don't just pop out easily. I will say it was easier the colder the wings were. Some of these individual wings I was manhandling for many minutes and the 'warmer' the chicken got in my hands, the more 'relaxed' the wing became, making it too flexible to pop. So keep them cold.



Now that you've got a bunch of limpy wingettes, your going to find you have this pocket to fill with whatever you want. We are using our mixture. Now that it's been chilling in the fridge, you cut off the corner and have basically made a piping bag. Use your finger to open up that wing cavity. Then slowly squeeze the mixture into the cavity. DO NOT OVERFILL. You need the end to kind of close up in the end.

I decided that I should try to seal the ends of the wings. I attempted to thread the skin closed using toothpicks, but this did not go well. The toothpicks did not pierce the skin very well, which caused the filling to come out, and even then it still wasn't closed very well. I did about 3 then gave up. That being said, they did hold up well, but probably not that much more than the other wings.



Once all the wings are filled, turn on your deep fryer and get it hot.  Then get your breading station ready; whisked eggs with a few dashes of hot sauce (Texas Pete in this case), and the packed of breading mix.


These wings are like little fish. The feeling was so weird because they had no bones, and my sensor memory says these are supposed to be solid.


Take each wingette and dip it into the egg, then roll it in the breading mixture.


I was a little worried about these things exploding in my deep fryer, especially since the ends were loose. Yes 3 were toothpicked, but for the rest, I just made sure the top was well breaded as a seal, or what I hoped would be a seal.


When the deep fryer oil was hot (the max for my machine), I put 3 test wingettes in. I propped them up on their 'tails' ie the tip of the wing. I wanted the exposed end up so that the bottom would crisp up, and slowly cover the top. Down they went . . .


. . . and not a total failure! Yes, some of the filling spilled out, but it wasn't the explosion or mess I was expecting . . . just a little oozing.


I left them in for about 10 minutes, popping them out about half way just to check on them, re-position as necessary, and just because I like pretending to be a fry cook for some reason. I guessed they were done when they started to float, but I was nervous about overcooking them.


They came out looking fantastic. The crispy coating of a jalapeno popper with just a bit of oozing cream cheese mixture!



Even the mixture seemed to crisp up from the deep frying. I deep fried because I really wanted that proper crispy coating, but baking could have been an option.



These suckers also come with their own handle - the nub allows you to pick it up like chicken on a stick, but then you can eat the handle!


Well not it all, but the crispy skin and there's a little bit of meat in there. AND because you take out the bones, it's basically bite size. Above is one with a bite take out, and you can see all the green in there!


Here's what Jason had to say:
  • awesome creation of a jalapeno popper wing. Cream cheese mix needed more flavour -perhaps more jalapeno?
  • very crispy
  • size of wing is deceptive - the nub makes it look bigger - but it is bite size 
  • awesome appetizer [not a meal wing - great for sharing]
  • process was difficult - long prep [deboning]
  • flavour was excellent, really good.



My thoughts were a bit mixed. I loved the concept. I loved the crunch of the skin. I loved that it reminded me of jalapeno poppers. The texture of the wings threw me off, because they don't feel the same in the mouth like a normal chicken wing. That's not bad, but it won't be like a wing.

The other thing I would do differently is up the jalapeno content; the spinach was to me the dominant flavour. I would add a lot more OR even hollow out a jalapeno, fill it with the cheese mixture, and then put that into the wing cavity. I would also not put in spinach. Not because spinach tasted bad at all, but it was stronger than the jalapeno wing.

This recipe gave me a chance to experiment and broaden my wing horizons. I had never deboned a wing, or figured out how to stuff it and seal it. It shows how versatile wings can be. AND based on this recipe, I now have an idea to do a deep fried pickle wing . . .

Boston Pizza is at it again.


They have to be the most 'wingovative' in their marketing campaigns around ordering wings. I mean in the past we have had Terry Peters, or who can forget Carl the Professional Wing Critic? It seems they are tapping into Canadian cultural psyche by appealing to beer and the Two-Four. For the non-Canadians reading this, a Two-Four is a case of beer with 24 beers. 


You get a box that is like a 2-4 with 24 wings. BP Wings Two-Four. Of course their campaigns always have a bit of humour by juxtaposing wanting wings in a box over a traditional basket.



I get excited when I see this kind of focus on a wing, but I had to stop and question what was going on here to:


First, I'm assuming this is a take-out thing, because why would you get a box in the restaurant? Then I started to question the costs.

24 wings are going to cost $29.99. You get 2 different types of wings ('all meat', breaded, fried, baked) and 2 sauces :

  • Naked
  • Mild
  • Medium
  • Hot
  • Thai Chili
  • Teriyaki
  • Amber Ale
  • Spicy Samurai

but maybe a double order isn't 12 wings . . . I don't know.

LJ & I ordered some of our favourite take-out Chinese this weekend. I asked for extra hot sauce (Wing's Food Ltd Hot Chili Sauce). When I went to pick it up, they confirmed my order and gave me even more hot sauce.



After we used many packets, I still had lots left over so I added them to my stash. I try and ration these sauce packets, but after actually collectivizing them all, it seems I have 40 left.

Turns out I don't need to ration anymore.




 I love this sauce but have only ever seen it in these packages. According to the website they either come like this or in a 2 x 4 liter jugs . . . so does anyone want to go in on a 4l jug with me?

  • Honey Butter Wings from Bar Bill - bbq and hot sounds good!

HAPPY BACK TO THE FUTURE DAY!


Today is the day Doc and Marty went to the future, or today, but was the future in the 1980's, What a great movie.



Back to the Future II did give us a cool glimpse at what people envisioned having in the future regarding food; Pepsi Perfect, and dehydrated pizza. But missing was chicken wings of the future.

I haven't had a chance to work on a recipe, but they'd by called 1.21 Gigawatt Wings; they'd be crispy but probably made with a Pepsi-based sauce. I  picture a 'white' heat (because of the lighting) so maybe something with horseradish?  I don't know.

Goodbye 2015, Hello 2016

2015 was quite a year.


Wings @ O'Grady's Outpost in Ottawa in 2015. I took photos but never posted a review.


Life has been going at light speed and doesn't seem to be stopping. I love writing this blog but 2015 saw my worst year to date in keeping up with it. Not a single restaurant review (I documented places, but never posted). I hate saying things are busy because everyone is busy, but I stopped writing because I focused my energy elsewhere. Life changed.

What happened in 2015?

It was a year of ups and downs. I've been engaged to a woman I love, and have been planning a wedding. I had some health set backs that while managed, drained a lot out of me. I got some excitement back in the blog by teaming up with Sobeys to do some crazy recipes. I got a new job and move out of my 'palace in the sky.' I no longer live at my workplace, which I thought would lead to oodles of time to work on the blog, but it didn't. I traveled a LOT across the province, but rarely with any real recreation or rest. I got a cell phone (my first! I know I know) which has changed how I social media my wings. My grandma died just before Christmas. 2016 started with my future mother-in-law also dying.

It wasn't a great start to a new year. But like 2015, it will be filled with highs and lows. I have so much to be thankful for and to look forward to: my wedding is in a couple of months; I love where I work; my apartment is great; so are my friends. And I know that this year I will not get back to writing this blog like I used to - its just not possible. But I am committed to keep exploring chicken wing culture, writing when I can, and not feeling guilty when I don't. As I write this I am excited because I'm about to test out a new deep fryer, and then Instagram my meal, which posts to Twitter, and then post it on here.

I often fear that my blog will become one like my wing graveyard. Sometimes I think I should just give it up. But so often people ask me how is the blog, or why haven't I posted in a while, and it makes me feel like I've made a positive impact. When I realized we were celebrating 10 Years of Lord of the Wings, I knew that this was something that has to go on.





This is a passion project for me, and writing about food is very important to who I am. So don't give up on Lord of the Wings blog, because I haven't. I look forward to exploring strange new wings, to seek out new wings and new wing civilizations. To boldly go where no wing eater has gone before . . .

So 2016, bring it on! I'm ready for you.

You might need some chicken wings & if you live in the GTA, here's where you can get some. Personally I suggest you make your own, but we don't always have time or energy, so sometimes pre-prepared or frozen is the way to go:



Food Basics: Prime frozen wings for $6.98 790-800g - not a bad deal for frozen wings. Never tried them though.





Loblaws: They are all about wings this weekend:

  •  $2.99/lb for fresh wings - not bad. 
  •  20 cooked wings (hot or cold) for $10.
  •  President's Choice wings (700-907g) for $9.99. They don't come down to this price very often.
  •  Pinty's NFL 50th Anniversary chicken wing: $14.99  for 800g. Not a great deal and I don't know what these are beyond their normal wings.




Metro:  Fresh 2 Go 15 Hot or Chilled Chicken wings for $7.99. Do not recommend these.




RCSS:  They are also bringing it all wings this weekend:


  • 30 wings for $10. They are already cooked and are chilled.
  • President's Choice Split wings Club Size air chilled wings, $4.53/lb. I don't like $4.53 a pound as a price for wings . . .
  • President's Choice frozen Club Pack is $19.98 for honey garlic or mild Southern-style wings (1.81kg*)


*what's great about Canada is that we like to mix our metric and our imperial measurement systems. Who knows how your wings are going to be weighed.




Sobeys:

  • Get a 16" take & bake pizza and quote "1kg and 3lb Chicken Wings" for $19.99. Does that mean you get 2 differently measured orders of wings?
  • Our Compliments frozen wings are buy 2 get the third box free. Not a wing brand I recommend either.




  • There is also 'Finger Food Faves' tray of 30 wings & 2 whole racks of wings for $44.99


Walmart:  Pinty's wings (810-950g) are $9.97 for a frozen box of wings. This is a big sale for Pinty wings which are usually $15 a box.

Ronda Rousey & Hooter's Wings

Almost a year ago I had no idea who Ronda Rousey was. But I liked her love of wings.

Flash forward and I've become a big fan of Ronda's (even if I don't watch MMA). Things were going awesome for her, then she lost, and then they weren't.

After she lost her big fight to Holly Holm things were tough for Ronda, but she upheld her promise to a Marine to go to the Ball with him, and it ended up with wings from Hooters.

How do I know? She told Jimmy Fallon:




I think she's cool. She loves wings, and she can kick ass. A true #wingwarrior

The Lord of the Wings blog has been stagnant for too long.

I love this blog and I love chicken wings and it`s time to get back to a state of regular posting and exploring chicken wings.

So to do so, I`m restarting WORLD WIDE WEB WACKY WING WEDNESDAY


I started WWWWWW as a way to force myself to post at least once a week and you know what? Let's do it again. The last time I posted a WWWWWW was 2013. That's ridiculous.

So every Wednesday, expect a post about someone else posting about chicken wing culture. Search #lotwwwwwww.

I haven't been blogging but I have been all over instagram for chicken wing photos. I have a viewer in the blog but I am going to re-post to the blog whenever I can. Re-post Sundays? Let's see how this goes. But find me at @lotw_wingking.



On top of all that, I want to get back to what LOTW was all about - reviewing chicken wings. I'm trying to streamline my methods because it takes waaay to long to post a review. Give me time, but we'll get there.

I originally came across Josh for his "Makin A Pizza" rap - and I could not get this song out of my head:




I was also like, this guy looks really familiar - have I seen him somewhere else before?

Yes, yes I have:



He used to be on Epic Meal Time. Epic.


Anyways, he made some internet waves when he combined 2 of my favourite things, GAME of THRONES and CHICKEN WINGS.

How?  He created a Throne of Wings:



When you play the game of thrones you win or you die. When you play the game of wings, you win and you cry.

The photo became so popular it led to its own fan art:

Harvey's & Kelsey's wing promotions

Harvey's is doing up Buffalo Chicken flavours these days - and I do have to say I am a fan of the Buffalo Chicken sandwich - its crispy, saucy and has a bite.

Kelsey's on the other hand has both a Wing & Chicken Finger combo OR a Buffalo Chicken Sandwich for $10 - seems like a decent deal to me. I haven't had their wings for a while, but they used to be good.

Reuban Paterson: Artist


I may not know art, but I know I like chicken wings and art. At the Albany campus of Massey University in New Zealand, one of his sculptures was installed named "The Golden Promise":



It is glorious and will be mine one day.

"An established Auckland artist renowned for his work using glitter, Mr Paterson used the metaphor of a wing symbolising protection and nurturing offered by the university to students at the campus, which was previously the site of chicken farming.)"

“This work especially refers to – and celebrates – the development of the university from its beginnings as an agricultural college, into what it has aspired to become over the course of its own history – and just as the university has transformed and grown over this time, so too has the pastoral land on which it is located at Albany,”
